Marnie’s Murderous Madeleines

These red velvet Madeleines make a marvelous Halloween (or anytime) treat!

What better thing to make when you’re stressed then Murderous red-velvet madeleines, like Marnie did in Chapter 22 of Fairly Frozen?

Marnie's Murderous Madeleines

Servings 24 pieces

Ingredients
  

  • 6 oz Unsalted Butter melted and cooled
  • 2 Large Eggs
  • 2 Large Egg Yolks
  • 1 cup Sugar
  • 2 pinches Salt
  • 2 tsp Vanilla Extract
  • 1 1/3 cup All-purpose Flour
  • 1/4 tsp Baking Powder
  • 2 Tbsp Cocoa Powder
  • 4 drops Red Gel Food Coloring
  • Powdered Sugar for dusting

Instructions
 

  • In a medium mixing bowl, lightly whisk the egg and egg yolk until combined.
  • Add the salt, sugar, vanilla extract and red food coloring, then whisk until it's all creamy and evenly colored.
  • Sift the flour, baking powder, and cocoa powder together until combined and the baking powder and cocoa are evenly distributed. (sift onto a sheet of waxed paper, and you can easily dump it back into the top of the sifter for another go) Then GENTLY fold the dry ingredients into the egg mixture in two batched until JUST combined.
  • Add the melted butter, again folding until just combined...do NOT overbeat the mixture.
  • Refrigerate the batter and preheat the oven to 375º F
  • Prepare the madeleine pans: brush melted butter into the mold, removing any excess butter that pools in the bottom, then dust molds with flour coating the surface and removing anything that doesn't stick.
  • When the oven is preheated and the batter is rested and lightly chilled, drop a glomp of batter (about a tablespoon) in each mold, then bake 12-14 minutes until springy and the edges are just beginning to pull away.
    NOTE: with the red coloring and cocoa powder, you won't be able to tell doneness by the color! if you wait for them to darken they'll be overdone, so...don't do that!
  • When they're done, set on a rack to cool, then turn out, dust with powdered sugar, and deliver to a neighbor to bring them joy (or a curse...they are murderous madeleines, after all!)
